Thank you for fixing the water:rice ratio, I'm only mentioning this as the prior review comments on the ratio being wrong.
This was a great recipe to try first, so many great spices and an interesting combo of veggies.
This was easy and the spice combo is lovely

This recipe is delicious and very simple to prepare. Having all the ingredients right there on hand made this a snap to cook.

I do think there is an incorrect quantity ratio here. I have been cooking rice for 50 years and never heard of 1/4 cup of rice to 4 cups of water. That would give you rice soup. I used a full cup of rice to 1 ⅓ cups and it came out perfectly. I would also use a tad less salt.
