1 Table Spoon Olive oil
1 Cup Onion
Preparation: Diced
2 Cups Sweet potato frozen
Preparation: Cut on chunks
Mix and cook for 5 mins
4 Table Spoons Tikka Masala Paste
Stir in the Masala curry paste and cook for 10 mins
1 Chickpeas Can (400gr/14oz)
Add the chickpeas, juice and all, and mash a few with a fork.
1 Tomato Can (400gr/14oz)
Scrunch in the tomatoes and add the water. Bring to the boil, then turn the heat down and simmer for 15 mins until thickened.
1 Water 400gr/14oz
1 Spring greens Bag (around 300gr)
Preparation: sliced
Push the curry to one side of the pan. Add the spring greens, then cover and simmer for 5 mins until wilted.
Stir half the greens through the curry, then divide the curry and remaining greens between warm plates and serve with rice or warm naans, if you like.
