Instructions

Heat the coconut oil in a large pot over medium-high heat. Add the cumin seeds and toast them for half a minute.

Garlic

Preparation: Canned, Chopped

Instructions

Add the crushed tomatoes, spices and garlic. Cook for five minutes and stir occasionally.

Brown lentil Green

1/2 Cup Brown lentil Green

Preparation: Soak overnight and rinse

Water

1.5 Cups Water

Mix

Cover the pot

Instructions

Add the soaked lentils and the water. Bring to the boil, then cover the pot and simmer until the lentils is are soft and the curry is thick. Stir the pot a few times to prevent the lentils from sticking to the bottom.

Coconut milk

2 Cups Coconut milk

Instructions

Add the canned coconut milk and bring the pot back to simmer. Remove the pot from the heat and stir in the parsley.
